Bread | The basic Ingredients & how they workSome great news that will no doubt help you on your studies at college or university. ABST Members can now download the book "Bread, The Basic Ingredients and How They Work" for free, which covers off some basic points on bread ingredients and their basic function in bread.
It focuses on the topics covered on Level 2 and 3 Bakery although includes some Level 4 topics as well and aims to explain the science behind it in more simple terms, for students to gain a basic understanding for them to go on to read more scientific books and journals relevant to their studies. Viennoiserie | Production & TechnologyThis book focuses on the production and technology to include classic products such as croissant, pain au chocolate and other products such as Danish Pastries enriched doughs such as doughnuts and brioche.
It provides a history into the topic, along with more specific technical understanding on the function of the main ingredients. A really interesting read on both the process to produce laminated products and technical reasons behind the process as well. This book will be very useful for members across a range of different studies at both college and university, including Level 3 and degree level also.
